Lemon Cream Cheesecake Recipe

Ingredients
1 cup graham cracker crumbs
2 cups cottage cheese
4 sheets gelatin
⅓ cup unsalted butter, melted
8 oz cream cheese
3 lemons (zest and juice)
1 cup powdered sugar

Instructions

  1. Crush the graham crackers and mix with the melted butter. Press the mixture firmly into the bottom of a 7-inch (20 cm) springform pan and refrigerate for 30 minutes.
  2. In a large bowl, combine the cream cheese, cottage cheese, powdered sugar, and the zest of two lemons. Soak the gelatin sheets in cold water according to the package instructions, then gently heat until melted. Mix the melted gelatin with the juice of all three lemons and add it to the cheese mixture. Stir well to combine.
  3. Pour the filling over the chilled crust and refrigerate for 6–8 hours until set.
